Easy Fresh Milled Sourdough Discard Chococate Cookies

Delicious, soft, and chewy with a rich chocolate flavor.

Ingredients
  

  • 1/2/ cup butter
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup sourdough discard
  • 1 tsp vanilla
  • 1 egg
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/3 cup cocoa powder
  • 1 1/2 cup fresh milled flour

Equipment

  • 1 medium mixing bowl
  • 1 small mixing bowl
  • 1 whisk
  • 1 Baking Sheet
  • parchment paper (optional)
  • Countertop Grain Mill (if using fresh milled flour)

Method
 

Step 1: Prepare the Dough
  1. In a large mixing bowl (you can whisk by hand or use a mixer, like a Kitchen Aid), combine the wet ingredients until smooth. In a separate bowl, whisk together the dry ingredients.
  2. Gradually combine the wet and dry ingredients until a soft cookie dough forms.
Step 2: Fold in Chocolate
  1. Mix in chocolate chips, chocolate chunks, or your preferred chocolate additions.
Step 3: Scoop the Dough
  1. Using a spoon, portion the dough onto a parchment-lined baking sheet. The dough is soft, so no need to have it perfectly round, just as best you can.
Step 4: Bake
  1. Bake until the edges are set while the centers remain soft.
Step 5: Cool
  1. Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack. I like to just slide the parchment paper onto the counter to cool
