Sourdough Discard Banana Bread

Ingredients
  

  • 1/2 cup sourdough discard
  • 2-3 very ripe bananas
  • cup butter melted
  • ½ cup maple syrup or honey you can sub with sugar too if you prefer
  • ¼ tsp salt
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all purpose flour you can sub with whole wheat or fresh milled flour too
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon (optional)
  • optional: ½ cup chopped nuts, craisins or chocolate chips

Method
 

  1. Preheat oven to 350 F
  2. Oil one 8x4 inch loaf pan.
  3. In medium mixing bowl, mash the bananas.
  4. Then mix in sourdough discard, butter, sugar (or maple syrup), salt, egg, and vanilla.
  5. Then add in flour, baking soda, baking powder, and cinnamon. Mix until incorporated.
  6. Pour into the oiled loaf pan and bake at 350 F for about 50 minutes or until a toothpick comes out clean.
  7. Let cool before taking out fo the pan and slicing. Enjoy!
