Sourdough Discard Snickerdoodles

These snickerdoodle cookies are soft and chewy and one of my family's favorite treats!

Ingredients
  

For cookies:
  • 1 cup butter softened
  • 1 1/2 cups sugar
  • 1/2 cup sourdough discard
  • 1 tsp vanilla
  • 2 eggs
  • 2 1/4 cup all purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt
For sugar coating:
  • 1/4 cup sugar
  • 2 tsp cinnamon

Equipment

  • 1 medium mixing bowl
  • 1 whisk
  • 1 cookie sheet
  • 1 small bowl
  • parchment paper (optional)

Method
 

  1. Preheat oven to 375 F
  2. Cream together butter and sugar until light and fluffy (2-3 minutes)
  3. Add in discard, eggs, and vanilla and mix together
  4. Add in dry ingredients and mix until combined
  5. In a separate small bowl mix the 1/4 cup sugar and 2 tsp cinnamon for the topping
  6. Shape dough into balls, however size you want them. Recommended 1 inch in diameter each.
  7. Roll them in the cinnamon sugar mixture and place on a cookie sheet.
  8. Bake the cookies at 375 F for 8-10 minutes until the edges are cooked.
  9. Cookies will continue to bake on the cookie sheet so don’t overbake them or they will become too crispy.
  10. Let cool a few minutes and then place on a cooling rack to cool completely
