If you’re looking for a delicious way to use up extra sourdough discard, these sourdough discard brownies are an easy one to add to your baking list. They’re rich, chocolatey, fudgy, and a great way to use sourdough starter without having to wait for it to become active and bubbly.

Brownies are one of my favorite recipes for sourdough discard because the sourdough adds moisture and a little extra depth of flavor without making the brownies taste sour. You get all the goodness of a classic homemade brownie while putting that extra starter to good use!
Whether you’re brand new to sourdough or you always seem to have a jar of discard waiting in the refrigerator, this is a simple recipe you’ll want to keep on hand.
Why You’ll Love These Sourdough Discard Brownies
These brownies are:
- Rich and chocolatey
- Fudgy and soft in the center
- An easy way to use sourdough discard
- Made with simple pantry ingredients
- No fermentation or active starter required
- Easy enough for beginner sourdough bakers
And because this recipe uses sourdough discard, you can make it whenever the craving for brownies hits!

What Is Sourdough Discard?
Sourdough discard is simply the portion of sourdough starter that you remove before feeding your starter.
Even though it may not be active enough to rise a loaf of bread, it can still be used in all kinds of recipes. Pancakes, waffles, muffins, cookies, quick breads, and brownies are some of my favorite ways to use it.
For this recipe, your discard does not need to be bubbly or recently fed. You can scoop it right out of your discard jar and add it to the brownie batter.

Ingredients for Sourdough Discard Brownies
You only need a handful of simple ingredients to make these brownies.
Butter – Adds richness and helps create that classic brownie texture.
Sugar – Sweetens the brownies and helps give the tops that delicious brownie crust.
Eggs – Give the brownies structure while keeping them rich and fudgy.
Vanilla extract – Adds flavor and complements the chocolate.
Sourdough discard – A great way to use up extra starter and adds moisture to the brownies.
Cocoa powder – Gives the brownies their deep chocolate flavor.
All-purpose flour – Provides just enough structure without making the brownies too cakey.
Salt – Balances the sweetness and brings out the chocolate flavor.
Baking Powder-Adds a little lift to the brownies, helping them rise slightly and creating a softer, lighter texture while still keeping them rich and fudgy.
Chocolate chips – Optional, but highly recommended if you want extra pockets of melted chocolate throughout the brownies.
How to Make Sourdough Discard Brownies
1. Prepare Your Baking Dish
Preheat your oven and lightly grease your baking dish or line it with parchment paper.
Using parchment paper is optional and makes it especially easy to lift the brownies out of the pan once they’ve cooled.
2. Mix the Wet Ingredients
Melt the butter and allow it to cool slightly.
In a large mixing bowl, combine the melted butter and sugar. Whisk until light and fluffy. Add the eggs and vanilla and mix until everything is well combined.
Stir in the sourdough discard.

3. Add the Dry Ingredients
Add the cocoa powder, flour, baking powder, and salt to the wet ingredients.
Stir just until everything is combined. Try not to overmix the batter once the flour has been added.
If you’re using chocolate chips (highly recommend), gently fold them into the batter.
4. Bake
Spread the brownie batter evenly into your prepared baking dish.
Bake until the edges are set and the center is just baked through. A toothpick inserted into the center should come out with a few moist crumbs rather than completely clean.
This is one of the tricks to keeping homemade brownies fudgy!
5. Cool and Slice
Allow the brownies to cool before slicing.
It can be tempting to cut into them immediately, but letting them cool gives the brownies time to set and makes them much easier to slice.

Tips for Fudgy Sourdough Brownies
Don’t overbake them. Brownies will continue to set as they cool, so you don’t want to wait until a toothpick comes out completely dry.
Avoid overmixing. Once you add the flour, mix only until you no longer see dry streaks.
Let them cool before slicing. If you want those nice, clean brownie squares, give them plenty of time to cool first.
Add extra chocolate. Chocolate chips or chopped chocolate are an easy way to make these even more decadent.

Do Sourdough Discard Brownies Taste Sour?
No! Sourdough discard adds a subtle depth of flavor, but these brownies should still taste like rich, chocolatey brownies.
The cocoa, sugar, vanilla, and chocolate easily take center stage. If anything, the slight tang from the discard can help balance the sweetness and make the chocolate flavor even better.
Can I Use Cold Sourdough Discard?
Yes! This is one of the reasons I love discard recipes.
You can use sourdough discard straight from the refrigerator. There’s no need to feed it or wait for it to become active before making your brownies.
Optional Add-Ins
Once you have a good sourdough brownie recipe, it’s easy to change it up. Try adding:
- Semi-sweet chocolate chips
- Milk chocolate chips
- White chocolate chips
- Chopped walnuts or pecans
- Peanut butter chips
- A sprinkle of flaky sea salt on top
- Carmel drizzled or swirled over the top before baking
You could even swirl a little peanut butter into the batter before baking.
How to Store Sourdough Discard Brownies
Store leftover brownies in an airtight container at room temperature for a few days.
For longer storage, you can keep them in the refrigerator, although I prefer letting them come back to room temperature before eating so the texture softens again.
You can also freeze brownies. Slice them into individual portions, wrap them well, and store them in a freezer-safe container. This makes it easy to pull out a brownie whenever you want a quick treat.
