Course: Breakfast
Cuisine: American

Ingredients

1/2 cup Pumpkin Puree
1/4 cup Sourdough Discard (active starter would work too)
4 tbsp Honey
1/4 cup Olive Oil (or avocado)
1 cup Milk
2 Eggs
1 tsp Vanilla Extract
1/2 tsp Salt
1 cup All Purpose Flour
1/2 tsp Cinnamon (ground)
1/4 tsp Cloves (ground)
1/4 tsp Nutmeg (ground)
1 tsp Baking Powder
1/2 tsp Baking Soda

Equipment

  • waffle iron
  • mixing bowl
  • whisk
  • measuring cups

Method

  1. You are going to want to mix all your ingredients up. Usually you mix your wet and dry ingredients separately for even distribution, but to be honest, I usually just mix them all in the same bowl for convenience.
First whisk the wet ingredients then add in the dry ingredients.
After you mix your ingredients, your batter should be fairly thin and pourable.
Preheat your waffle iron and follow the instructions for your waffle iron.
You will pour the appropriate amount into your waffle iron (I usually use a 1/3 cup measuring cup for each waffle) using a measuring cup makes it easy to scoop and pour into the waffle iron.
Cook to your liking of crispiness and remove to a plate or a cutting board. Repeat this until all your batter is used up.
Top with your favorite toppings! My kids honestly love to eat these plain they are so tasty, but you can add any of your favorite toppings!
