These pumpkin spice sourdough discard waffles are fluffy and delicious and get you in the mood for fall feelings. Your mornings will fill with the smell of pumpkin and your kids will keep asking you for more!

You know that feeling when summer is coming to an end and you can’t wait to get your cozy clothes on, curl up next to the fire, and enjoy a coffee and some pumpkin spice flavored treats? This waffle will give you all of those feels!

Keeping Mornings Simple and Easy With Pumpkin Spice Discard Waffles

With this recipe being a discard recipe, you don’t need to prep the night before or worry about fermenting your batter. As long as you have starter on hand you can whip these up easily in the morning!

Another great option is doubling the batch and freezing some for other mornings that you need really quick and easy without mess!

Ingredients:

  • Pumpkin Puree: just plain pumpkin puree
  • Sourdough Discard (active starter would work too) If you need help making a starter, check out this video here
  • Honey: natural sweetens the waffle
  • Olive Oil (or avocado): I prefer one of these two oils for the health benefit
  • Milk: I prefer raw or whole milk, but any milk will work
  • Eggs
  • Vanilla Extract
  • Salt: sea salt is the best for the health benefit
  • All Purpose Flour: you can also switch this up with different flours if you prefer
  • Cinnamon (ground)
  • Cloves (ground)
  • Nutmeg (ground)
  • Baking Powder
  • Baking Soda

Instructions:

You are going to want to mix all your ingredients up. Usually you mix your wet and dry ingredients separately for even distribution, but to be honest, I usually just mix them all in the same bowl for convenience. First I whisk the wet ingredients then I add in the dry ingredients!

After you mix your ingredients, your batter should be fairly thin.

Preheat your waffle iron and follow the instructions for your waffle iron.

You will pour the appropriate amount into your waffle iron (I usually use a 1/3 cup measuring cup for each waffle) using a measuring cup makes it easy to scoop and pour into the waffle iron.

Cook to your liking of crispiness and remove to a plate or a cutting board. Repeat this until all your batter is used up.

Top with your favorite toppings! My kids honestly love to eat these plain they are so tasty, but you can add any of your favorite toppings!
