Sourdough Discard Apple Pie Muffins

Combining the flavors of an apple pie and the delight of a muffin

Ingredients
  

Muffin Batter:
  • 1/2 cup sourdough discard
  • 1/2 tsp salt
  • 1/2 cup softened butter
  • 3/4 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup plain yogurt regular or greek
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups all purpose flour
Honey Glazed Apples:
  • 1-2 large apples peeled and cubed
  • 2 tbsp butter
  • 1 tbsp honey
  • 1/2 tsp` cinnamon
  • 1/4 tsp nutmeg
Cream Cheese Glaze:
  • 1/4 cup cream cheese
  • 2 tbsp softened butter
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1-3 tbsp milk (more if needed)

Method
 

For The Muffin Batter:
  1. Preheat oven to 350 F and oil a muffin baking pan (Or you can use muffin paper liners)
  2. Peel and cut apples into small chunks, set aside for later
  3. Whisk together all the wet ingredients from the muffin batter ingredient list in a medium bowl
  4. Add in the dry ingredients from the muffin batter list and mix until combined
  5. Pour this mixture into the prepared muffin baking pan
For The Apples:
  1. Glaze the apple chuncks by melting 2 tbsp butter in a skillet, adding in the apples and sauté for about 2-3 minutes. Add in the honey, cinnamon, nutmeg, and cook for a few more minutes until apples are slightly softened and have a pleasant aroma
  2. Evenly distribute apples overtop of the muffin batter in the baking pan
  3. Bake for 13-15 minutes or until a toothpick comes out clean
For The Cream Cheese Glaze:
  1. In a standing mixer or with a hand mixer, whisk together the butter and cream cheese until slightly fluffy.
  2. Add in the powdered sugar and wisk a couple minutes until light and fluffy.
  3. Add in the vanilla and milk, adding small amounts of milk at a time until the desired consistency is achieved.
  4. After muffins are done baking,, remove from pan to cool on a drying rack and drizzle the top with cream cheese glaze.
  5. Enjoy!
