Method
For The Muffin Batter:
- Preheat oven to 350 F and oil a muffin baking pan (Or you can use muffin paper liners)
- Peel and cut apples into small chunks, set aside for later
- Whisk together all the wet ingredients from the muffin batter ingredient list in a medium bowl
- Add in the dry ingredients from the muffin batter list and mix until combined
- Pour this mixture into the prepared muffin baking pan
For The Apples:
- Glaze the apple chuncks by melting 2 tbsp butter in a skillet, adding in the apples and sauté for about 2-3 minutes. Add in the honey, cinnamon, nutmeg, and cook for a few more minutes until apples are slightly softened and have a pleasant aroma
- Evenly distribute apples overtop of the muffin batter in the baking pan
- Bake for 13-15 minutes or until a toothpick comes out clean
For The Cream Cheese Glaze:
- In a standing mixer or with a hand mixer, whisk together the butter and cream cheese until slightly fluffy.
- Add in the powdered sugar and wisk a couple minutes until light and fluffy.
- Add in the vanilla and milk, adding small amounts of milk at a time until the desired consistency is achieved.
- After muffins are done baking,, remove from pan to cool on a drying rack and drizzle the top with cream cheese glaze.
