Sourdough Discard Apple Pie Muffins

The muffin is perfectly spiced and the caramelized apples on top bring in the perfect apple element! Then we drizzle it with the perfect cream cheese glaze and it’s seriously chef’s kiss!
As a mom, I love this recipe because it is so delicious and gives you the taste of an apple pie, but it is easy for your kiddos to eat being a muffin. I also keep the cream cheese glaze off a few of them for my toddler so it’s less mess and less sugar and she just loves the apples and muffins anyway!
Tools you will need to make my sourdough discard apple pie muffins
2 Medium Bowls (One for the muffin batter and one for the cream cheese glaze)
Stirring Spoons
Standing Mixer optional but can be used if desired (my favorite one is here! and use code EMIILYFUENTES for a $20 discount!)
Hand mixer (if not using a stand mixer)
Small pan (my favorite cast iron ones from Amazon linked here) for the honey glazed apples
Muffin Tin
Muffin papers or oil for greasing your muffin tin
Ingredients
Muffin batter:
sourdough discard
salt
butter
maple syrup
eggs
vanilla extract
plain yogurt (regular or greek)
baking powder
baking soda
cinnamon
nutmeg
all purpose flour
large apples, peeled and cubed
honey
cream cheese
powdered sugar
milk
Directions:
- Preheat oven to 350 F and oil a muffin baking pan (Or you can use muffin paper liners)
- Peel and cut apples into small chunks, set aside for later
- Whisk together all the wet ingredients
- Add in the dry ingredients and mix until combined
- Pour this mixture into the prepared muffin baking pan
- Glaze the apple chuncks by melting 2 tbsp butter in a skillet, adding in the apples and sauté for about 2-3 minutes. Add in the honey, cinnamon, nutmeg, and cook for a few more minutes until apples are slightly softened and have a pleasant aroma
- Evenly distribute apples overtop of the muffin batter in the baking pan
- Bake for 13-15 minutes or until a toothpick comes out clean
- For the glaze: in a standing mixer or with a hand mixer, whisk together the butter and cream cheese until slightly fluffy.
- Add in the powdered sugar and wisk a couple minutes until light and fluffy.
- Add in the vanilla and milk, adding small amounts of milk at a time until the desired consistency is achieved.
- After muffins are done baking,, remove from pan to cool on a drying rack and drizzle the top with cream cheese glaze.
- Enjoy!
