What is Flat Bread?

Flat bread is a type of bread that is rolled or pressed into a flat shape, then cooked on a skillet. It is one of the oldest forms of bread and this one uses baking powder to get a fluffy and soft texture.

Although flat bread has lots of variations, I love using baking powder for a fluffy texture, but no wait time like yeast needs. This is something that I can make quickly to use for sandwiches for lunch when I am out of traditional sandwich bread or just to change things up for lunch. You can use it for cold sandwiches, grilled sandwiches and as a side to any other dish!

Ingredients:

Flour (Heritage Grain Flour is my favorite!)

Plain Yogurt (regular or greek)

Salt (the best mineral salt)

Baking Powder

Olive Oil

Instructions:

In a medium bowl, mix together flour, salt, and baking powder.

Add in yogurt and olive oil and mix until a dough forms. You can adjust flour and yogurt amounts until you get a nice firm dough that is not sticky.

Knead the dough for a few minutes until all the ingredients are well combined and the dough is smooth. You can choose to refrigerate the dough at this point if you are not using it right away or you can cook right away.

Cut the dough into 6 equal pieces and roll out dough, flipping over and rotating with each roll to help it form a round or oval shape.

(This is my simple wooden rolling pin that makes rolling dough so easy!

Roll out to your desired thickness and size, about 1/4 of an inch for a fluffy bread. It will puff up as it cooks so go a little thinner than you want the bread to be.

Heat up a skillet on medium high heat. I love to use cast iron for this (here is a link to my favorite cast iron skillet).

Cook for a minute or two on each side until the surface has browned spots to your liking.

Enjoy!!

Tips for making Flat Bread:

  1. I like to add oil to my rolling pin if it is sticking rather than flour so I get a nice smooth bread without flour residue on it.
  2. Adjust the temperature of you skillet to get desired color on each side of your flat bread.
  3. Refrigerating for a few minutes will make the dough easier to roll out, but isn’t necessary if you are needing it asap.
  4. The thinner you roll it, the thinner the bread will be.
  5. My kids love these for PBJs and I will just let them put the peanut butter and jelly on themselves as a fun hands on lunch idea!
  6. Add in an extra 1/2 cup flour and 1/2 cup sourdough starter (active or discard) to make a sourdough discard version!
